Biltong is produced from different types of meat, which is air-dried, and originated in South Africa.

Like jerky, both are spiced and dried meats but because of the different methods used the taste will differ.

Even though biltong is relatively new, South African’s have been making biltong as a means to preserve meat for hundreds of years.

Because biltong is high in protein and has a low carb content it is good for a variety of diets.

Biltong is so popular partly due to its much more favorable nutrient composition compared to many other common snack foods, such as potato chips, cookies, and crackers.

What is the difference between beef jerky and biltong?

Biltong is marinated, spiced and air dried while jerky is usually cooked at a very low temperature.

Originally biltong is made using prime beef silverside that is spiced marinated and air dried. You can also use types cuts of meat like springbok, kudu and different types of venison.

What temperature should biltong be dried at?

It depends on the humidity. Industrial dryers usually dry biltong at temperatures between 25–30 °C. In conditions that are not humid biltong can be dried at room temperature in a biltong dryer. In very humid conditions use a biltong dryer that can fit a 50 watt light bulb to help with the humidity and prevent mould.

The biltong will be quite hard on the outside and the longer you dry it will determine the wetness on the inside. Some people like wet biltong and others prefer it dry.

Biltong is the perfect snack for banting however some recipes do use brown sugar as well as Worcestershire sauce that contains sugar. Sugar is a big no if you are on a banting diet so always read the label or ask your supplier if you are not sure.
