Turkey Breast (2.5kg to 3kg)

A dieter’s delight, turkey breasts are lean and virtually fat-free. Some would claim they have little flavour, but they make a healthy alternative to fattier meats and can be very tasty if cooked right.

Whole turkey breast can be roasted but is prone to drying out if overcooked.

Herbed butter or an olive oil spice mix can be injected under the breast skin to help keep it moist during cooking, as will strips of streaky bacon layered over the breast.

Strips or cubes of turkey breasts are good for quick cooking in stir-fries, warm salads, or curries.
